Fun Gelatin Recipes For Summer Cookouts
A summer cookout isn’t complete without some sort of gelatin-based dessert. It’s a staple for the hot season as it’s fun, light, just the right amount of sweet and refreshing. The best part about a gelatin dessert is that it can come in all shapes and forms. Here are some go-to cookout desserts made with gelatin that’ll make your summer party come alive.
Peaches ‘n Cream Pie
- 1½ cups cold water
- ¾ cup sugar
- 5 teaspoons cornstarch
- 1 (3 oz.) package peach gelatin
- 1½ cups frozen unsweetened peach slices
- 1 package cream cheese
- 3 tablespoons confectioners’ sugar
- 1 tablespoon milk
- 1½ cups whipped topping
- 1 pre-made graham cracker crust
Gelatin can make for one of the easiest, no-bake summer desserts. To whip up a Peaches ‘n Cream Pie, combine sugar, cornstarch and water in a saucepan, and bring to a boil, stirring until thickened. Then remove from the stove, whisk in the gelatin and add the peaches. Place the concoction in the refrigerator until it’s slightly thickened. Use this waiting time to beat together cream cheese, confectioners’ sugar and milk and fold in whipped topping. Take your graham cracker crust and spoon the whipped topping and cream cheese mixture into the bottom, then layer on the gelatin mixture on top and refrigerate until the pie is set. Wait three hours before slicing up the fruit gelatin pie.
Very Berry Gelatin Mold
- ½ cup water
- 2 packages (3 oz.) strawberry gelatin
- 1½ cups boiling cranberry juice
- 1½ cups club soda
- 1 teaspoon lemon juice
- 1 cup fresh blueberries
- 1 cup fresh strawberries (sliced)
- 1 cup fresh raspberries
Why not take advantages of all the berries in season during the summer time? A Very Berry Gelatin Mold is a winner among fruit dessert recipes. Dissolve strawberry gelatin powder in a mixture of boiling cranberry juice and water. Let it sit for 10 minutes then stir in club soda and lemon juice and refrigerate until it’s partially set. Next, fold in all the berries and pour it into a six-cup ring mold that’s coated with cooking spray. Refrigerate until set then unmold the berry-filled gelatin treat.
Orange Gelatin Salad
- 4 cups water
- 1 can (11 oz.) mandarin oranges
- 1 can (8 oz.) crushed pineapple
- 2 packages (6 oz.) sugar-free orange gelatin mix
- 1 tub (16 oz.) cottage cheese
- 1 tub (8 oz.) whipped topping
Every summer cookout needs a fruit salad, right? Put a spin on the traditional version by tossing up an Orange Gelatin Salad. Prepare one package of sugar-free orange gelatin with two cups of boiling water until dissolved and then stir in two cups of cold water, then refrigerate for four hours and cut into cubes after it’s set. Then in a large mixing bowl, combine the mandarin oranges, pineapple and other gelatin pack and let chill for 30 minutes. Add cottage cheese and gelatin cubes to the mix and fold in thawed whipped topping. The fruit salad is tasty, fun and refreshing.
